Seven Feathers Casino Resort’s Breakfast QuesadillaIngredients2 - 6” Tortillas 1/2 C. Cheddar cheese2 Large eggs, scrambled1 Tbls. Green onion 1/4 C. Fresh tomato, chopped 1/2 C. Cooked bacon, choppedSour CreamPrepared GuacamolePrepared pico de gallo or salsaSliced micro greensAdditional ingredients, if desired:Smoked salmon, roast beefDirections1) Place two six inch tortillas on lightly oiled griddle to heat over medium heat.2) Top each with 1/4 C grated Tillamook Cheddar Cheese, one-half of chopped green onion, chopped tomato and bacon. Spread the scrambled eggs on one tortilla and then gently flip the other tortilla on top of the eggs. Continue to heat until lightly browned, lightly turning once. Flip quesadilla over and brown top side.3) Place quesadilla on plate and cut into quarters.
