EUGENE, Ore.- Lox, Stocks and Bagels popped up in South Eugene about 2 months ago. Since then, Scott Lilly's shop has enjoyed a lot of popularity- and it's not just because of the authentic East Coast bagels.
The name helps, too.
"I actually put a thing on Facebook that says, 'Here's your chance everyone...name a bagel shop'!" Lilly explained. "Most of them were snarky, but there were some pretty good ones. And this is the one I like the best. "
Lilly moved from New Jersey to Eugene about ten years ago. He wasn't finding the bagels he knew and loved back East, so he decided to start making his own.
Eventually, that became Lilly's very own bagel shop in South Eugene.
"We do everything from scratch. We don't have a freezer or a microwave, we cure our own lox, we make the bagels, we boil them and bake them," Lilly said. "We don't keep bagels from the day before, they're all fresh, every morning."
Perhaps the most quintessential East Coast dish Lilly serves is the lox and cream cheese bagel, made with salmon he cures in house.
Lilly serves the lox bagel traditional- thinly sliced red onion and capers; fresh tomato upon request.
The shop offers a variety of bagels, from salt to poppy-seed, and features several sandwiches and salads, too.
As the saying goes- 'if you want it done right, do it yourself'. For his shop, Lilly took that advice to heart- lock, stock and barrel.
