red onion marmalade- makes for 5-6 sandwiches

1 red onion

4 oz. red wine

1 cup red wine vinegar

1 tbl apple cider vinegar

1/3 cup sugar

½ tsp kosher salt

Clean and julienne the red onion and place in small saucepot with all other ingredients and simmer or reduce down the liquid by 75% oruntil syrup. Make sure to not boil the red onions for this will not fullycook or tenderize the onions properly. Remove from the heat and let cool downbefore place in fridge

Artisan sandwich - makes for 1 sandwich

2 each-thick slices of fresh made bread or use thicksourdough

3 oz. Fresh grated white cheddar cheese

2 ½ tbl red onion marmalade

1 cup fresh baby arugula

2 tbl unsalted butter – make sure its soft before using

Fresh black pepper

Butter both outside slices of bread before putting together.Place both butter sides down on a medium high fry pan and then divide thecheese on both of the slices. Add the marmalade on top of one of the slice andadd the fresh cracked pepper. Make sure the bread gets a nice rich browntoasting to the butter sides before putting the two together. Add the arugulajust before finished and then put the sandwich halves together. Remove andslice. Should have a nice crunch sound
