Tasty Tuesday: First Anniversary Episode
I brought Tasty Tuesday back about one year ago- so, in honor of the rebooted Tasty Tuesday's first anniversary, I thought I'd take a look back and visit the very first place I featured: Elegant Elephant Baking Co.
Elegant Elephant Baking Co. and its trusty food truck, Belle, are busier than ever.
"The last year has been really busy for us, which has been really exciting," owner Jessie Scarola told me. "So, when I saw you last, I think I had four employees. Including myself. We now have eleven."
Elegant Elephant is a dedicated gluten-free bakery. Jessie was inspired by her family's history of Celiac's disease to create a bakery that catered to food allergies.
"Everything we do is gluten-free foundation, but then we also have dairy-free, egg-free, and about fifty percent of our products are both vegan and nut free," Jessie said.
Some menu items include cinnamon rolls drizzled in maple sugar glaze, strawberry cream turnovers, and their hot bagel sandwiches. Bagels aren't usually a gluten-free item, but Elegant Elephant manages to do it with aplomb. One of their most popular bagel sandwiches includes cream cheese, avocado and sun-dried tomatoes.
Elegant Elephant Baking Co. turns five this year, with a storefront shop on the horizon in Hummingbird Wholesale's future building.
